dc.description.abstract | La demanda de alimentos está creciendo en paralelo con el aumento de la población mundial, con ello se produce el incremento de los efectos negativos de la industria alimentaria sobre el medio natural. Así, nace la necesidad de buscar nuevas fuentes de proteína animal cuya producción sea más sostenible y además proporcione todos los nutrientes necesarios para el correcto mantenimiento de los organismos. Los insectos son una propuesta de alimento más sostenible con el medio natural y además ricos en nutrientes esenciales, propuestos estos tanto para alimentación humana como para animal. Para comprobar su efectividad, en este trabajo se realizaron digestiones in vitro de los insectos Hermetia illucens, Musca domestica y Tenebrio molitor, a través del cálculo de las concentraciones de grupos amino libres y del balance del nitrógeno. Además, se separaron las fracciones de hemocele y exoesqueleto para comprobar los posibles cambios en la digestibilidad. Las comparaciones se realizaron tanto entre fracciones del mismo insecto como entre insectos, incluyendo en estas los datos de harina de pescado y harina de soja como alimentos de referencia. Se ha obtenido que, teniendo en cuenta su alta digestibilidad proteica, los insectos pueden ser una alternativa adecuada a las fuentes tradicionales de proteína animal actuales, harina de pescado y de soja. Y que el posible beneficio de fraccionar los insectos requiere un estudio más profundo, ya que los resultados no llegan a ser concluyentes. The demand for food is growing in parallel with the increase in the world's population, thus increasing the negative effects of the food industry on the natural environment. Thus, there is a need to look for new sources of animal protein whose production is more sustainable and also provides all the nutrients necessary for the proper maintenance of organisms. Insects are a proposal of more sustainable food with the natural environment and also rich in essential nutrients, proposed both for human and animal food. To prove their effectiveness, in this work in vitro digestions of the insects Hermetia illucens, Musca domestica and Tenebrio molitor were carried out by calculating the concentrations of free amino groups and the nitrogen balance. In addition, hemocele and exoskeleton fractions were separated to check for possible changes in digestibility. Comparisons were made both between fractions of the same insect and between insects, including fish meal and soybean meal as reference feeds. It has been obtained that, taking into account their high protein digestibility, insects can be a suitable alternative to the current traditional sources of animal protein, fishmeal and soybean meal. And that the possible benefit of fractionating insects requires further study, as the results are inconclusive. | es_ES |
